Breakfast Quesadillas from Weelicious

Roasted Garlic and Tomato Soup from Spuds.
Oatmeal Cake

Mix: 1 cup oatmeal (uncooked) 1/4 cup melted butter, and 1 1/3 cup boiling water. Cover and let stand for 20 min.

* if your using leftover oatmeal from breakfast than just simply mix 2 cups of already prepared oatmeal with the 1/4 cup melted butter. ( no water or dry oats needed) if the prepared oatmeal is really thick you might need to add just a little hot water to make it a more creamy texture.

Then mix: 2 eggs, 1 cup brown sugar, 1 1/3 cup whole wheat flour or a combination of white and wheat, 1 tea. Baking soda, 1 tea. cinnamon, 1 tea. Salt and 1/2 tea. Nutmeg. Mix well, then add in the oatmeal mixture.

Pour into a greased 9x13 pan. Bake at 350• for 35 minutes. Let cool

This recipe was passed on to me from a friend and has become a regular snack in our house lately. I've added and omitted many ingredients depending on what I had around the house. The best thing about it is that the oatmeal makes it so moist it seems impossible to mess it up! I've added shredded zucchini, pumpkin, dried fruit and nuts and today I even threw in some already prepared Quinoa! I reduced the amount of butter and sugar from the original recipe so I could serve it for breakfast and not feel guilty about it. Trust me, it tastes better than it looks.

oatmeal is so good for yu and you have found a delicious way to eat lots!It is suppose to reduce your colesterol but you have to eat a lot- I will try this one on Graham. He fixes his own oatmeal (old fashioned real) every a. m.

Loved hearing every word! Congrats to Isaac!!!! How excellent a mother and writer and cook and wife and friend and daughter inlaw , ect. and ect. you are. Can't wait to see you and hug those chillins!!!!!
