Sweet Potato Biscuits


2-3 Medium Sweet Potatoes (about 1 1/2 lbs)
1/2 cup unsalted butter, cut into chunks
2 Tbsp light brown sugar
2 Tbsp white sugar (I used brown for this too)
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1 1/2 cups flour (I used 1 cup whole wheat pastry flour and 1/2 cup white flour)
1 1/2 tsp baking powder

Preheat oven to 400 degrees. Prick potatoes and microwave them until tender, at least 10 minutes (I had some leftover mashed sweet potatoes that I used). Scoop out flesh and blend with a mixer the flesh and butter. Let the mixture cool for 15 minutes. Beat in sugar salt and spices. Then flour and baking powder. Roll dough into an 8 inch square and cut into 2" square biscuits (obviously, I just dropped my with a spoon on the coookie sheet). Place on a greased cookie sheet and bake for 15-20 minutes until a toothpick inserted in the middle comes out clean.

The playgroup I attend had a recipe exchange last week and this was one I picked up. I was a little nervous about using whole wheat flour, but they turned out awesome! The kids loved them and devoured them the first day! Although, I did manage to save one for Josiah's school snack today.
