Homemade Bread


I've started baking all of our own bread in an attempt to eat less processed food, and for the simple enjoyment of it.. We are all hooked on it. I'm not sure we will ever be able to go back. Josiah helped me knead the dough today. He said "I just love this, we should do this every day". I have a memory of me sitting in the lunch room eating my sandwich on homemade whole wheat bread and looking at everyone else at the table with white store bought bread. I felt a little left out. Too bad I didn't realize how much better mine was. I guess I'll have to prepare my kids for that moment and indoctrinate them with the idea that it's better.
Here is my favorite recipe for whole wheat bread. I have been substituting 2 cups of bread flour for 2 cups of the whole wheat flour. This makes it rise a little better and therefore is a little fluffier.
Honey Whole Wheat Bread
2 pkgs yeast (4 1/2 t)
2 1/2 t salt
1 1/2 C Milk
1 1/2 C Water
1/4 C vegetable oil
1/4 C Honey
Warm milk, water, oil, and honey on the stove to 120 degrees. Mix 1/2 of the flour, salt, and yeast. Gradually add the liquid to the flour mixture. Gradually add the rest of flour. Knead for 10 minutes. Let rise until dough has doubled in size (aprox. 1hr) Punch down. Place in 2 loaf pans, let rise again for aprox 1hr. Bake at 350 degrees for 30 minutes

Fresh out of the oven, with butter and honey, nothing compares. Do you make an extra loaf to eat right away?

I do make two loaves at a time and usually half of one loaf gets eaten very quickly.

Yes, eating a reasonable amound it the hardest part of making bread. I made bread years ago--in my twenties. Then Dennis took it up some years back. The speedy consumption quickly became a problem. There is such a thing as too good..

I keep hoping that as we get used to it we won't eat it as fast. It hasn't happened yet though.

well if you keep eating it too fast, you will need the "knitting diet" you mentioned :) just kidding.

I will be anxiously awaiting your books and tv show coming out when you become the next martha stewart or rachael ray. all your skills are very impresive!
