Last night as we were picking up the house Josiah got completely absorbed in it. He cleaned his room and Evie's room, then he moved on to the living room and the kitchen. I started reading to Eve and Isaac, but nothing could distract Josiah from his task. I think he was proud that he knew where everything went in the house. Maybe he felt a little mastery over this little space of his. Whatever it was, I was thrilled. So thrilled, that I promised him a special breakfast in the morning. It was a hit and since it was made with whole wheat pastry flour and only a little brown sugar it is also very healthy. I added a small amount of frozen berries and topped it with applesauce and powdered sugar. It was very moist and took so much less effort (and less oil) than making individual pancakes. I even sent a square to school with Josiah for his snack.

My co-worker made the same recipe the other day and said it was delicious! Now I definitely have to try it. I love the ungourmet. I haven't had a chance to make too many of her recipes but they always look really yummy.
Shay, I think I found her through your blog. I have only made a few things, a friend just made the peanut butter and jelly muffins and loved them.
