February is always a tough month in this part of the country, and every year I try to find ways to enjoy it. This year I deemed the month itself a celebration. So, to kick it off I made cupcakes! I loosely followed this recipe for lemon coconut ricotta cupcakes (minus the coconut) and put sprinkles on top just for extra celebration feelings. They were so good by the way.
Other things on the list are decorations, coloring February pictures, and valentines. Josiah is pretty excited that we had two special breakfast's in a row, pancakes and bacon, and he's called for special dinners too. We'll see what happens with that!!

ain't that the truth! The cupcakes look fantastic! And love that picture of Evie. I am such a sucker for really close ups!
I tell myself that's why I had a kid in February, because this month (especially for being the shortest) is so long and boring, we at least have a birthday to look forward to, haha!
