Popovers

I had heard of popovers a few times and when I finally looked at how simple the recipe was I had to give it a try. They really are incredibly easy. Plus, anything new that looks like a muffin is thrilling for little ones, especially when you eat them outside.





  • 2 Eggs

  • 1 cup all purpose flour

  • 1 cup milk

  • 1/2 tsp salt

Heat oven to 450 degrees. Grease non stick muffin tin REALLY well with butter. Beat eggs slightly, beat in remaining ingredients just until smooth (Do not overbeat). Fill cups 2/3 full. Bake 15 minutes. Reduce temp to 350 and bake 15 minutes more. Serve HOT. Also, don't peak in the oven or they might fall.


The instructions above are what I have adapted to work for a muffin tin because I don't have a special popover tin or custard cups. I am still experimenting with how to keep them from sticking to the pan and also with how to serve them. They are full of air inside so we tried them recently with cottage cheese and strawberry jam scooped into the middle. I may try them next with herbs and cheese and serve them with soup for dinner.

OOH! Something I can do! I usually glaze over if the ingredient list is more than about 6 things, so thanks so much for sharing these!

Those look yummy! I had them in Maine at this hike in restaurant in the woods... they were with jam and butter and were delicious! Good thing we hiked in and out!
